  • 2 medium carrots, cubed
  • 150g Girandole pasta
  • 3 tablespoons olive oil
  • 1 white onion, diced
  • 4 garlic cloves, minced
  • 1 cup cauliflower, chopped
  • 1/2 leek, sliced
  • 2 large tomatoes, deseeded and chopped
  • 1/2 bell green pepper, diced
  • 1/2 cup olives (green or black)
  • Salt and pepper, to taste
  • Garnish, to taste:
    • Olive oil
    • Cracked black pepper
    • Shaved cheese (such as Parmigiano)
    • Basil and parsley


  1. Boil the cubed carrots until soft. Drain and set aside.
  2. Cook the Girandole pasta according to package instructions in salted boiling water. Reserve a cup of pasta water before draining.
  3. In a pan, heat the olive oil over medium heat. Add the diced onion, minced garlic, chopped cauliflower, and cooked carrots. Stir and sauté for 2-3 minutes.
  4. Add the chopped deseeded tomatoes and diced green pepper. Season with salt and pepper to taste. Sauté for an additional 5 minutes.
  5. Add the sliced leek and olives to the pan and sauté for another 3 minutes.
  6. Add the cooked pasta to the pan along with a splash of the reserved pasta water. Toss to combine.
  7. Serve in bowls and garnish each serving with a drizzle of olive oil, cracked black pepper, shaved cheese, basil, and parsley.
