This easy-to-make creamy tomato pasta recipe is perfect for a quick and satisfying weeknight meal. With just a few simple ingredients, you can create a delicious and creamy tomato sauce that pairs perfectly with any of the Waveney Mill pasta range.
Ingredients
- 1/4 cup olive oil
- 2 cloves of garlic, diced
- 1/2 white onion, finely chopped
- 1/2 cup tomato paste
- 1/2 cup heavy cream
- 1 tablespoon red pepper flakes
- 225g Spatziola pasta
- Reserved pasta cooking water
- 1 tablespoon butter
- 1/4 cup cheddar cheese, grated
- Fresh basil, chopped, to serve
- Salt and pepper to taste
Method
- Cook the pasta in salted water until al dente. Reserve about 1/2 cup of the pasta cooking water.
- In a large saucepan, heat the olive oil, garlic and onion over medium heat. Cook until the onion is soft and translucent.
- Add the tomato paste and cook for a few minutes, stirring occasionally.
- Season with salt, pepper, and basil.
- Pour in the heavy cream and add the butter and red pepper flakes. Mix well.
- Add some of the reserved pasta cooking water to the sauce to thin it out to your desired consistency.
- Keep stirring until the sauce has thickened and everything is well combined.
- Add the cooked pasta to the sauce and toss until it is evenly coated.
- Garnish with grated cheddar cheese and more fresh basil.
